1. Classic Pimm’s Cup
Start with a glass filled with ice. Add 50ml of Pimm’s No. 1, then top up with chilled lemonade. Garnish with slices of cucumber, strawberries, orange, and mint leaves. Stir gently to combine and enjoy the refreshing flavours of summer. “New balls please!”
2. Gin and Elderflower Fizz
In a tall glass, pour 50ml of gin (pick the one at the back of your kitchen cupboard) and 25ml of elderflower liqueur over ice. Squeeze in the juice of half a lemon and top up with sparkling water. Stir briefly and garnish with a sprig of thyme or a cucumber slice for an elegant touch.
3. Strawberry Mojito
Impress your friends with this crowd pleasing twist on the classic Mojito.
In a sturdy glass, muddle together 3 fresh strawberries (hulled and halved) with 6-8 mint leaves and 1 tablespoon of sugar. Add the juice of half a lime and 50ml of white rum. Fill the glass with crushed ice and top up with soda water. Stir well and garnish with a strawberry and mint sprig.
4. Aperol Spritz
This one is more popular on the continent but us Brits always enjoy a spritz! And this one is dead easy to make.
Fill a wine glass with ice and add 50ml of Aperol. Top up with 75ml of prosecco and a splash of soda water. Stir gently to combine and garnish with a slice of orange for a vibrant summer treat.
5. Coconut Margarita
If you like a Margarita but want a tropical twist to this sharp refreshing classic, rim a margarita glass with toasted coconut flakes. In a shaker, combine 50ml of tequila, 25ml of coconut cream, 25ml of triple sec, and the juice of one lime. Fill the shaker with ice, shake vigorously, and strain into the prepared glass. Garnish with a lime wedge and enjoy the tropical flavours.
